How to Boil Eggs So They're Easy to Peel?
Have you ever boiled eggs only to find that the egg white sticks to the shell when you peel them? It's a common problem, but it usually has more to do with the egg's freshness and cooling process than with the boiling itself.
Very fresh eggs are generally harder to peel because the membrane sticks more tightly to the egg white. As eggs age for a few days, the pH inside changes, making the shell easier to remove after cooking.
To begin, place the eggs in a pot and cover them completely with water. Bring the water to a boil, then reduce the heat and let the eggs simmer gently for about 9–12 minutes, depending on how firm you want the yolks.
As soon as the eggs are cooked, transfer them to a bowl of ice water for several minutes. This stops the cooking process and helps separate the membrane from the egg, making peeling much easier.
For even better results, peel the eggs under running water or in a bowl of water. The water can slip beneath the shell and help lift it away without damaging the egg white.

1. Use eggs that are a few days old if possible.
2. Boil for 9–12 minutes after the water reaches a boil.
3. Transfer immediately to ice water.
4. Let them cool for 5–10 minutes.
